The functioning of a smokehouse put in a kitchen to create smoked food is shown in the attached diagram.

In general, the method by which food is cooked in an oven with the aid of hot air is relatively simple.

Moving on to the specifics, the oven where the food is placed is the sole component of the smokery that is visible in the picture. As an illustration, some fish can be seen dangling from hooks. The actual mechanism, however, works underground.

Two underground chambers in the smokery each have a lid that may be removed. The first chamber allows air to enter, and its pressure can be adjusted by acting as a resistor by using the lid. The air flows into the second chamber after entering, where it is heated by the burning wood. In reality, there is a lid on this chamber where logs can be placed to fuel the fire. Finally, hot air is introduced into the smokery through a metal pipe, which increases the temperature within the oven and heats the smokery, where smoked food is produced.

The above diagram clearly shows the general layout of a home smokery as well as how it operates.

Overall, it is evident that of the three steps, two are performed underground and the third is performed above ground.

The first portion of the construction is an empty underground chamber with a lid that can be opened from a location above ground level, as indicated in the diagram. When this lid is opened, air can enter the building to help with smoking.

A similar structure with a lid at ground level is seen in the second half. The chamber's lid may be opened, allowing wood logs to be inserted inside. These logs can be torched to start smoking food.

The third section consists of a bent long funnel that is pointed upwards in a fixed structure. The structure includes a big entrance at the bottom that links to the fireplace and a narrow hole at the top. Smoke from burning logs enters the room above ground level through this hole where fish and meat are hung from the top to cook.
